- Use young crisp tubers raw in salads or boil and eat like potatoes. Young shoots can be prepared
like asparagus. Buds can be cooked and eaten like green beans or dipped with the flowers into batter
and made into fritters. Fresh or dried buds and flowers can also be used in soups.

- Use the leaves in a green salad or cook and serve like spinach. Use dried leaves to make tea. It is
best to use violet leaves only when the plants are in flower so you can be sure they are violets and
not something else.
